Ratatouille, under all its states, shapes and sizes, but also tian provençal, piperade, and all those dishes, cooked, baked, grilled, stuffed, gratineed… that combine and pay a beautiful tribute to all those so marvelous summer vegetables: eggplant, zucchinis, summer squashes, bell peppers, tomatoes… A fireworks of colors, flavors and savors… Bon appétit!
